Cooking with Culturethèque: recipe number 11: Pancake Baking
Even if Pancake Day is now a bit far away, it’s never too late to make pancakes!
The recipe is taken from: Crêpes et galettes : Les crêpes, c'est chouette ! (2010) by Marie-France Chauvirey (see p.45).
For 6 to 8 pancakes
Preparation: from 10 to 15 minutes
Baking: about 3 minutes for each pancake
Ingredients
75g of baking flour
1 baking powder one level teaspoonful
½ teaspoon of sodium bicarbonate
1 and ½ teaspoon of white sugar
2 eggs
15 cl of milk
Oil or butter

« Après la Seconde Guerre mondiale, l’historiographie soviétique, qui avait condamné tous les souverains, a réhabilité Pierre le Grand, mais a considéré que Catherine II faisait partie d’un groupe de femmes dont il était inutile de parler. On peut donc dire qu’il y a toute une historiographie qui, jusqu’à ces toutes dernières années, ignore entièrement cette période. On a mis beaucoup de temps à lui reconnaître les mêmes qualités et les mêmes compétences que celles que l’on a accordées à Marie-Thérèse d’Autriche. Mais Catherine II était bien un homme d’État, et je dirais même que c’est, sans aucun doute, après Pierre le Grand ou avec lui, le grand homme d’État de la Russie. »
